No-Bake Choc Peppermint Slice

You have to try this easy, no-bake, vegan friendly snack 🍫

This is choc-mint HEAVEN 🤍 

BASE LAYER: 

🌿 1 cup almonds 

🌿 1/2 cup shredded coconut 

🌿 1/4 cup cacao powder 

🌿 8 pitted dates 

🌿 2 tbsp coconut oil (melted) 

 

MINT LAYER: 

🌿 1 1/2 cups raw cashews (soaked) 

🌿 1/2 cup coconut oil (melted) 

🌿 1/2 cup cacao butter (melted) 

🌿 1/4 cup maple syrup 

🌿 1 1/2 tsp peppermint extract 

 

TOP LAYER: 

🌿 1 cup dark chocolate chips 

🌿 1 tbsp coconut oil (melted) 

 

DIRECTIONS: 

1. Blend all base layers ingredients, transfer to a lined baking tray and place in the fridge for 10 minutes. 

2. Blend all mint layer ingredients, pour on top of the base layer and refrigerate for 30 minutes (or until firm). 

3. Melt chocolate chips and stir in the coconut oil once melted. Pour on top of the mint layer, spread until smooth and place in the fridge for a final 15 minutes.
